Ingredients
2 lb flank steak, cut into 1/4 in strips
1 tbsp coconut oil
4 cloves minced garlic
1/2 cup coconut aminos
1/2 cup water
2/3 cup coconut sugar
1/2 teaspoon minced fresh ginger
2 tbsp arrowroot powder
3 tbsp water
3 green onions, sliced into 1 in pieces
Directions
1 Season beef with salt and pepper. Put oil in pan to brown. Brown meat in batches, do not crowd. Transfer browned meat to a plate.
2 Add garlic and sauté 1 minute. Add coconut aminos, water, brown sugar, and ginger. Stir to combine.
3 Add browned beef and any juices. Select high pressure. Set timer for 12 minutes.
4 Turn pressure cooker off and use a quick pressure release. When valve drops, carefully remove the lid.
5 Combine arrowroot powder and water, whisking until smooth. Add mixture to sauce in the pot, stirring constantly. Select simmer and bring to a boil, stirring constant,y until sauce thickens. Stir in the green onions.
6 I serve this with “rice” cauliflower.
